Beef Stew with Mashed Potatoes
Ingredients:
1 1/2 lbs (680g) beef stew meat, cubed
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
4 carrots, peeled and sliced
4 celery stalks, sliced
3 potatoes, peeled and cubed
4 cups (946ml) beef broth
1 cup (240ml) red wine (optional)
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons flour (optional, for thickening)
Chopped fresh parsley for garnish
Mashed Potatoes:
4 large potatoes, peeled and quartered
1/4 cup (60ml) milk
2 tablespoons butter
Salt and pepper to taste
Instructions:
Prepare Beef Stew:
Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove from pot and set aside.
In the same pot, add chopped onion and minced garlic. Cook until onion is translucent.
Add carrots, celery, and potatoes to the pot. Cook for a few minutes until vegetables start to soften.
Return the browned beef to the pot. Pour in beef broth and red wine (if using). Add bay leaves, dried thyme, salt, and pepper.
Bring the stew to a simmer, then reduce heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until beef is tender and vegetables are cooked through.
If you prefer a thicker stew, mix flour with a bit of water to make a slurry and stir it into the stew. Simmer for a few more minutes until thickened.
Adjust seasoning if necessary. Remove bay leaves before serving. Garnish with chopped fresh parsley.
Make Mashed Potatoes:
While the stew is simmering, place quartered potatoes in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until potatoes are fork-tender.
Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper.
Mash the potatoes until smooth and creamy. Adjust seasoning if necessary.
Serve:
Serve the beef stew hot with a generous dollop of mashed potatoes on top. Enjoy!
