Cauliflower Mash Ingredients:
- 1 medium head cauliflower, cut into florets
- 2 tablespoons butter
- 1/4 cup heavy cream
- Salt and pepper to taste
- Optional: minced garlic or garlic powder for extra flavor
Instructions:
For the Meatloaf:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground beef, almond flour, Parmesan cheese, chopped onion, minced garlic, egg, tomato paste, Worcestershire sauce, oregano, basil, salt, and pepper. Mix until well combined.
- Transfer the mixture to a baking dish and shape it into a loaf.
- Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Once done, remove from the oven and let it rest for a few minutes before slicing.
For the Cauliflower Mash:
- While the meatloaf is baking, steam or boil the cauliflower florets until they are fork-tender, about 10-15 minutes.
- Drain the cauliflower and transfer it to a food processor or blender.
- Add butter, heavy cream, salt, pepper, and any optional garlic.
- Blend until smooth and creamy, adjusting the seasoning to taste.
Serve slices of the keto meatloaf alongside a generous portion of cauliflower mash. You can also add some steamed vegetables or a side salad for a complete meal. Enjoy your low-carb feast!
