keto meatloaf with cauliflower mash

 



Keto Meatloaf Ingredients:

  • 1 lb ground beef (preferably lean)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Cauliflower Mash Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Optional: minced garlic or garlic powder for extra flavor

Instructions:

For the Meatloaf:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, almond flour, Parmesan cheese, chopped onion, minced garlic, egg, tomato paste, Worcestershire sauce, oregano, basil, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a baking dish and shape it into a loaf.
  4. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  5. Once done, remove from the oven and let it rest for a few minutes before slicing.

For the Cauliflower Mash:

  1. While the meatloaf is baking, steam or boil the cauliflower florets until they are fork-tender, about 10-15 minutes.
  2. Drain the cauliflower and transfer it to a food processor or blender.
  3. Add butter, heavy cream, salt, pepper, and any optional garlic.
  4. Blend until smooth and creamy, adjusting the seasoning to taste.

Serve slices of the keto meatloaf alongside a generous portion of cauliflower mash. You can also add some steamed vegetables or a side salad for a complete meal. Enjoy your low-carb feast!
