Zucchini Noodles Recipe:
Ingredients:
4 medium-sized zucchinis
2 tablespoons olive oil
Salt and pepper to taste
Optional: minced garlic, grated Parmesan cheese, chopped fresh herbs (such as basil or parsley)
Instructions:
Wash the zucchinis and trim off the ends.
Using a spiralizer, julienne peeler, or mandoline slicer, create noodles from the zucchinis. If you don't have any of these tools, you can also use a sharp knife to carefully slice the zucchinis into thin strips resembling noodles.
Heat the olive oil in a large skillet over medium heat.
Add the zucchini noodles to the skillet and sauté for 2-3 minutes, tossing occasionally, until they are just tender. Be careful not to overcook them, as they can become mushy.
Season the noodles with salt and pepper to taste. You can also add minced garlic at this point if desired.
Remove the noodles from the heat and serve immediately. Optionally, sprinkle with grated Parmesan cheese and chopped fresh herbs before serving.
