chicken alfredo stuffed spaghetti squash



Ingredients:

2 medium-sized spaghetti squash

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Spaghetti Squash:

Preheat your oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds and membranes.

Brush the insides of the squash halves with olive oil and sprinkle with salt and pepper.

Place the squash halves cut-side down on a baking sheet lined with parchment paper.

Roast in the preheated oven for about 40-45 minutes, or until the squash is tender and easily pierced with a fork. Remove from the oven and let cool slightly.

Cook the Chicken:

While the squash is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat.

Add the diced chicken to the skillet and cook until it's no longer pink in the center, about 5-7 minutes. Remove the cooked chicken from the skillet and set aside.

Prepare the Alfredo Sauce:

In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.

Pour in the heavy cream and bring to a simmer.

Stir in the grated Parmesan cheese and Italian seasoning, and continue cooking until the sauce has thickened slightly, about 3-5 minutes.

Season with salt and pepper to taste.

Assemble the Dish:

Use a fork to scrape the flesh of the roasted spaghetti squash to create "spaghetti" strands.

Place the spaghetti squash strands in a large mixing bowl.

Add the cooked chicken to the bowl and pour the Alfredo sauce over the mixture. Gently toss everything together until well combined.

Serve:

Divide the chicken Alfredo mixture evenly among the spaghetti squash shells.

Garnish with chopped fresh parsley.
