Ingredients:
2 large sweet potatoes, washed and scrubbed
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons barbecue sauce
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Chopped parsley (optional, for garnish)
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the sweet potatoes into wedges. To do this, slice the sweet potatoes in half lengthwise, then slice each half into wedges.
In a large bowl, mix together the olive oil, honey, barbecue sauce, paprika, garlic powder, salt, and pepper.
Add the sweet potato wedges to the bowl and toss until they are evenly coated with the honey BBQ mixture.
Arrange the sweet potato wedges in a single layer on the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and caramelized.
Once cooked, remove from the oven and sprinkle with chopped parsley if desired.
Serve hot as a delicious side dish or snack.
