Keto Stuffed Cabbage Rolls


Ingredients:


1 large head of cabbage

1 pound ground beef (or turkey or chicken)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup cauliflower rice (optional, for extra bulk)

1/2 cup tomato sauce (sugar-free)

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella cheese (or any cheese of your choice)

Chopped fresh parsley for garnish (optional)

Instructions:


Prepare the Cabbage Leaves:

Bring a large pot of salted water to a boil.

Carefully remove the core from the cabbage head and place the whole head in the boiling water.

Boil for about 5 minutes, then carefully remove the outer leaves. Continue boiling and removing leaves until you have about 10 large leaves. Set aside to cool.

Prepare the Filling:

In a skillet over medium heat, cook the ground beef (or your choice of protein) until browned.

Add the chopped onion and minced garlic to the skillet and cook until softened.

Stir in the cauliflower rice (if using), tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes until everything is well combined. Remove from heat.

Assemble the Rolls:

Preheat your oven to 375°F (190°C).

Take one cabbage leaf and place a spoonful of the meat mixture in the center. Roll the leaf tightly, tucking in the sides as you go. Repeat with the remaining cabbage leaves and filling.

Bake:

Place the stuffed cabbage rolls seam side down in a baking dish.

Sprinkle shredded mozzarella cheese on top of the rolls.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cabbage is tender and the cheese is melted and bubbly.

Serve:

Once done, remove from the oven and let it cool for a few minutes.

Garnish with chopped fresh parsley, if desired, before serving.
