Cheese-Stuffed Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
1 cup shredded mozzarella cheese (or cheese of your choice)
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Toothpicks or kitchen twine
Instructions:
Preheat your oven to 375°F (190°C).
In a bowl, mix together the mozzarella cheese, Parmesan cheese, chopped parsley, minced garlic, dried basil, and dried oregano.
Lay each chicken breast flat on a cutting board. Using a sharp knife, slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
Stuff each chicken breast pocket with the cheese mixture, dividing it evenly among the four breasts. Secure the openings with toothpicks or tie with kitchen twine to keep the filling from spilling out.
Season both sides of the stuffed chicken breasts with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet and cook for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Remove the toothpicks or kitchen twine before serving.
